One Pot Meal: Chicken Pot Pie
1 medium large potato, diced
2 carrots,chopped
3 celery stalks, chopped
1 smallish medium onion, chopped
1/3 cup butter
1/2 cup of flour
2 cups chicken broth
1 cup whole milk
1 tsp salt
1/4 tsp pepper
4 cups cooked, chopped chicken
1 pie crust, home made or store bought.
preheat oven to 400. saute potato, carrots, celery and onions in butter in cast iron frying pan for 10 minutes. Add flour to sauteed veggies, cook for about 1 minute stirring constantly. combine broth and milk and gradually add to veggie mixture. cook over medium heat until thick and bubbly. stir in salt and pepper, add chicken. place pie crust on top of skillet, cut silts, place in oven. bake for 45-50 minutes, until top is golden brown.
