a new comfort food, red lentil and carrot soup

red lentil and carrot soup with coconut milk

2 cups red lentils, washed
1 tbls olive oil or ghee
2 onions finely chopped
4 garlic cloves, minced
2 tsp turmeric
1.5 tsp cumin
1 tsp salt
1/2 tsp black pepper
1 quart tomatoes with juice
2 carrots chopped
juice of half a lemon
6 cups chicken broth
1 can coconut milk
hot sauce (optional)
cilantro, finely chopped (optional)

In a large pot cook onions in olive oil until soft, add garlic, and spices stirring for one minute. Add tomatoes and bring to a boil. add carrots, lentils, lemon juice, and broth. cover and cook on low for about an hour. in this time I usually make sweet rice during this time). Stir in coconut milk, top with fresh cilantro and serve with hot sauce and rice.
