Sourdough blueberry muffins

sourdough blueberry muffin


1 cup sourdough starter
1 egg
4 tbsp melted butter, cooled
1/2 cup sugar
1 tsp lemon zest
2 cups all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 cup of fresh or frozen blueberries (or any berry for that matter)

heat oven to 400. grease muffin tins (even the paper cups if you are using them)
mix together the sourdough starter, egg, butter, sugar and lemon zest. sift together flour, baking soda and baking powder, fold into sourdough mixture until moistened. do not over beat or mix.
Dust blueberries with a little flour and gently fold into batter. (i usually let the mix rest for 1/2 hour to an hour at this point) divide evenly between 12 muffin spots.
bake for 25 minutes.
